ACLM-Inspired Skillet Black Bean Burgers

Shopping List (Makes 4 burgers)

Black Bean Burgers

  • 1 (15 oz) can black beans, drained and rinsed
  • ½ cup quick oats
  • ¼ cup homemade BBQ sauce
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Black pepper, to taste
  • Cooking spray or a small amount of olive oil

Whole-Food Plant-Based BBQ Sauce

  • 1 Tbsp tomato paste
  • ½ Tbsp mustard
  • ½ Tbsp balsamic vinegar
  • ½ tsp smoked paprika

For Serving

  • Butter lettuce or romaine leaves
  • 1 medium tomato, sliced
  • ½ small red onion, thinly sliced
  • Pickle chips

Instructions

  1. Make the BBQ sauce: Stir together tomato paste, mustard, balsamic vinegar and smoked paprika.
  2. Make the burger mixture: Mash the black beans in a bowl, leaving some texture. Stir in oats and ¼ cup BBQ sauce until well combined.
  3. Let the mixture sit for 10-15 minutes so the oats absorb some of the moisture.
  4. Divide the mixture into 4 portions and form into patties.
  5. Heat a nonstick skillet over medium heat. Lightly coat with cooking spray or a small amount of olive oil.
  6. Cook the patties for 4-5 minutes per side, until browned and heated through.
  7. Serve in lettuce wraps with tomato, red onion and pickles.
